Probably the preferred explanation today of the "fine-tuning" problem is that there are an infinite number of universes in the multiverse, so some of them are likely to have the conditions necessary for galaxies, stars, planets, and life.
Though with no evidence of the multiverse, its existence requires a fair amount of faith.
I guess as a scientist you never want to say, "we don't have a great explanation for this, so God did it" because your job is to explain the physical world. But I agree, there's something kind of absurd about making guesses at why the universe is so perfectly tuned based on basically no evidence, and then claiming it's science.
A sizable portion of the physics community agrees that string theory and the multiverse are not (yet) science.
